Chicken Satays with Peanut Sauce

Overview

Perfect for holiday entertaining, these yummy satays also make a nice light meal served with our coconut rice and a green salad.


Ingredients

The Meez:

  • 1 1/2 lbs boneless, skinless chicken breast cut into 1 1/4 inch long pieces

for the Marinade:

  • 2 Tb ginger, finely chopped

  • 2 cloves garlic, finely chopped

  • 1/4 cup sesame oil

  • 1/4 cup dark soy sauce

  • 1/4 cup rice wine vinegar

  • 1 tsp sambel oleck

for the Peanut Sauce (Makes 1 cup)

  • 1 Tb olive oil

  • 1 small onion, finely diced

  • 1/2 cup peanut butter

  • 1/2 cup coconut milk

  • 1/8 cup soy sauce

  • 1/8 cup honey

  • 4 - 6 Tb white vinegar

  • 1 Tb sweet chili sauce

  • Optional - 1 Tb sesame oil & 4 cloves garlic, minced


Directions

The Method:

  1. Combine all the ingredients for the marinade and stir well;

  2. Add the strips of chicken to the marinade and set aside;

  3. Heat the olive oil in a small pot;

  4. Add the onions to the pot and cook them 10 to 15 minutes, until tender & caramelized;

  5. Add the rest of the ingredients for the sauce (including the optional ingredients if you are adding them), whisk together, and simmer for 5 to 7 minutes;

  6. You can add water to the sauce mixture to achieve your preferred texture for the sauce

  7. Skewer the chicken in such a way as to hide the tip of the skewer;

  8. Heat your grill and place the skewers on the outside edge of the grill;

  9. Once cooked, set the satays aside on a tray with the sauce in the middle or drizzle the sauce on top.
