Chocolate Chip Cheesecake Cupcakes

Overview

It's all here in one place now - the "Meez" and the "Method".  The recipe is divided into the "Cream Cheese and Chocolate Chip Part" and the "Chocolate Cupcake Part" which you bring together in the end for the best part, the "Cupcake Part".

Ingredients

The "Meez"

The Cream Cheese & Chocolate Chip Part

  • 8oz cream cheese
  • 1 egg
  • 1/3 cup sugar
  • 1 cup chocolate chips

The Chocolate Part

  • 1 ½ cups flour
  • 1 cup sugar
  • ¼ cup cocoa powder
  • 1 tsp baking soda
  • 1 cup water
  • 1/3 cup oil
  • 1 tsp vinegar
  • 1 tsp vanilla

Directions

The "Method"

  1. Preheast oven to 350.

The Cream Cheese & Chocolate Chip Part

  1. Allow the cream cheese to get to room temperature, then soften the cream cheese in a bowl.
  2. Add the sugar and eggs and blend together. 
  3. Add the chocolate chips and mix everything together until blended.

The Chocolate Part

  1. In a separate bowl, add the flour, sugar, cocoa powder and baking soda and mix together.
  2. Hollow out a well in the middle of the mixture. 
  3. Add the water, oil, vinegar and vanilla to your 'well'.
  4. Blend together your wet ingredients and then gradually and blend together until all the wet and dry ingredients are well mixed.

The Cupcake Part

  1. Butter a muffin tin (add cupcake papers if desired) and place one large scoop of the chocolate mixture in each section - it should fill the cup just over half way.
  2. Then add a smaller scoop of the cream cheese mixture to the cup.
  3. Bake cupcakes for about 15 minutes or until a skewer comes out clean.
