Grilled Lemon-Basil Chicken Breasts

Ingredients

Your "Meez" includes:

  • 3 Tbsp fresh lemon juice
  • 3 Tbsp fresh basil, coarsely chopped
  • 2 garlic cloves, pressed
  • 1 Tbsp Dijon mustard
  • 6 Tbsp extra virgin olive oil
  • 1 1/2 tsp coarse kosher salt
  • 1 1/2 tsp finely grated lemon peel
  • 4 chicken breasts

Directions
  1. Whisk the first 7 ingredients together in a small bowl.
  2. Season marinade to taste with freshly ground pepper.
  3. Pour one half of the marinade into a resealable plastic bag, add chicken, and seal.
  4. Turn the bag to coat the chicken and marinate at room temperature for about 1/2 an hour or in the refrigerator for up to 2 days, turning occasionally.
  5. Pre-heat BBQ to medium high.
  6. Place chicken, with some marinade still clinging, on the grill and grill chicken until cooked through and golden brown on all sides (approx. 30 minutes).  Turn frequently. 
  7. Allow chicken to rest for 5 minutes, slice, and transfer to plates.
  8. Pour the balance of the marinade onto grilled breasts.
