Triple-Ginger Cookies

Ingredients

The Meez

  • 2 1/2 cups all purpose flour
  • 1/3 cup crystalized ginger, minced
  • 2 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup unsalted butter, room temperature
  • 1 cup golden brown sugar
  • 1 large egg, room temperature
  • 1/4 cup molasses
  • 1 1/2 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1/3 cup sugar

Directions

The Method

  1. Preheat oven to 350F
  2. Line 2 baking sheets with parchment paper.
  3. Whisk together flour, crystallized ginger, baking soda and salt in a medium bowl.
  4. In a mixer, beat butter in a large bowl until creamy & light, about 2 minutes.
  5. Gradually beat in brown sugar on medium high speed until creamy, about 3 minutes.
  6. Add egg, molasses, ground ginger, cinnamon and cloves and beat to blend.
  7. Add flour in 2 parts beating on low speed after you add the flour each time.
  8. Place 1/3 cup sugar in a small bowl. 
  9. Measure 1 tablespoon of dough and roll it into a ball between the palms of your hands.
  10. Roll the ball in the sugar to coat.
  11. Place each sugar coated ball on the baking sheet.
  12. Repeat with remaining cookie dough, spacing cookies 1 1/2 to 2 inches apart.
  13. Bake cookies until surfaces crack and cookies are firm around the edges, but still slightly soft in the center (about 15 minutes).
  14. Cool completely on the sheets by placing the sheets on a baking rack.
