White Chocolate & Lime Shortbread with Toasted Almonds

Ingredients
  • 2 cups all purpose flour
  • 1/2 cup sugar
  • 1/2 tsp salt
  • 1 cup unsalted butter, chilled & cut into 1/2 inch cubes
  • 1 Tbsp lime peel, finely grated, divided
  • 1 tsp vanilla extract
  • 3 1/2 oz white chocolate, finely chopped
  • 1/2 cup almonds, chopped & toasted

Directions
  1. Preheat oven to 325F
  2. Butter a baking pan
  3. Blend flour, sugar and salt in a food processor
  4. Add butter, 2 tsp of the lime peel and vanilla to the dough mixture
  5. Process dough until just blended and forms clumps
  6. Press dough into a prepared baking pan
  7. Pierce dough around the edge with a fork
  8. Using a sharp knife, cut dough into wedges, cutting through dough completely.
  9. Bake shortbread until golden brown, crisp around the edges and firm to the touch (approximately 35 minutes)
  10. Remove from the oven
  11. Using a sharp knife, immediately recut shortbread, gently separating the triangles.
  12. Cool shortbread in pan on a rack.
  13. Place white chocolate in a small metal bowl
  14. Set bowl over a small saucepan of gently simmering water and stir just until choc0late is melted and smooth
  15. Remove bowl from over the water
  16. Using a fork, drizzle melted chocolate in a zigzag pattern over the shortbread
  17. Sprinkle the almonds evenly as well as the remaining lime peel
  18. Let cookies stand until the chocolate sets - about 1 hour
