Bruschetta with Marinated Peppers & Mushrooms

Ingredients

The Meez:

  • 1 ½ - 2 cups grape tomatoes, cut in half
  • 2 Tb             balsamic vinegar
  • 1                  red peppers
  • 1                  yellow peppers
  • 1                  portabello mushrooms
  • ¼ -½ cup      red onion, thinly sliced
  • ¼ cup           basil, thinly sliced
  • 1 Tb             olive oil
  • 1                  avocado
  • 1/4               baguette
  • 1                  garlic clove
  • Salt & pepper to taste

Directions

The Method:

  1. Slice the grape tomatoes in half.
  2. Add the vinegar to the tomatoes and allow to marinate for about 30 minutes.
  3. Dice the peppers and the mushrooms into small pieces and then place into the bowl with the marinated tomatoes. 
  4. Thinly slice the onions and basil and add them to your vegetables. 
  5. Season with salt & pepper
  6. Thinly slice the baguette and place slices on to a baking sheet to toast. 
  7. Once toasted, remove from the oven and rub each piece of bread with garlic. 
  8. Just before serving, cut the avocado and add to the vegetable mixture. 
  9. Spoon the mixture on each piece of bread and drizzle with olive oil.
